AZTEC CUISINE: HOW PLANTS HELPED TO DEFINE A NATION

Focus on Aztec culture with an emphasis on how the cuisine shaped the nation. According to one my dictionaries, cuisine is defined as “a style or quality of cooking.” It is not a random collection of foods. Rather, all cuisines occur at the intersection of many factors including: the natural environment, culture, chemistry, and history. Therefore, the study of a cuisine is an excellent way to examine the multiplicity of relationships between plants and people.
